Smoky Au Gratin Potatoes

Ingredients

  • 3 medium potatoes sliced thin
  • 1 medium onion sliced thin
  • 2 cups shredded Cheddar cheese
  • 21/2 cups shredded Smoked Gouda cheese
  • 4 tbs butter or margarine
  • 4 tbs flour
  • 1 pt Half and Half
  • 11/2 cups milk
  • 2 tsp salt
  • 1 tsp coarse ground black pepper
  • ½ tsp minced garlic
  • 21/2 qt oiled casserole dish

Instructions

  • Light Roux:
  • Heat butter in sauce pan on medium
  • Add flour and stir constantly until light tan
  • Cheese Sauce:
  • Add Half and Half and milk to roux and stir until thickened.
  • Add spices, Gouda cheese and 1 cup Cheddar cheese
  • Cook on medium heat until smmoth and creamy
  • Preheat oven to 400
  • Cover bottom of casserole with cheese sauce
  • Add layer of potatoes, layer of onion and layer of cheese sauce, finishing with cheese sauce
  • Cook in center of oven at 400 for 11/2 hours or until golden and fork tender
  • Top with remaining Cheddar cheese and return to oven till melted about 15 min
