Light Roux:
Heat butter in sauce pan on medium
Add flour and stir constantly until light tan
Cheese Sauce:
Add Half and Half and milk to roux and stir until thickened.
Add spices, Gouda cheese and 1 cup Cheddar cheese
Cook on medium heat until smmoth and creamy
Preheat oven to 400
Cover bottom of casserole with cheese sauce
Add layer of potatoes, layer of onion and layer of cheese sauce, finishing with cheese sauce
Cook in center of oven at 400 for 11/2 hours or until golden and fork tender
Top with remaining Cheddar cheese and return to oven till melted about 15 min
