Smoky Au Gratin Potatoes; Dang Good and Cheesy
We have been experimenting with Smoked Gouda Cheese and here is a Smoky Au Gratin potato dish that brings back memories of campfire cooking.
Smoky Au Gratin Potatoes

Ingredients
- 3 medium potatoes sliced thin
- 1 medium onion sliced thin
- 2 cups shredded Cheddar cheese
- 21/2 cups shredded Smoked Gouda cheese
- 4 tbs butter or margarine
- 4 tbs flour
- 1 pt Half and Half
- 11/2 cups milk
- 2 tsp salt
- 1 tsp coarse ground black pepper
- ½ tsp minced garlic
- 21/2 qt oiled casserole dish
Instructions
- Light Roux:
- Heat butter in sauce pan on medium
- Add flour and stir constantly until light tan
- Cheese Sauce:
- Add Half and Half and milk to roux and stir until thickened.
- Add spices, Gouda cheese and 1 cup Cheddar cheese
- Cook on medium heat until smmoth and creamy
- Preheat oven to 400
- Cover bottom of casserole with cheese sauce
- Add layer of potatoes, layer of onion and layer of cheese sauce, finishing with cheese sauce
- Cook in center of oven at 400 for 11/2 hours or until golden and fork tender
- Top with remaining Cheddar cheese and return to oven till melted about 15 min
