Smoky and spicy Southern Lima Beans
Southern Lima Beans were created for Thanksgiving and Christmas and is a fantastic side for turkey or ham. Every year our family gets together for holiday dinner and the kids always ask for our lima beans, it has become a tradition.
Sometimes I mix the leftover Southern Lima Beans with mashed potatoes, make patties and fry them in bacon grease until golden brown.
We use this recipe in our Cajun Shepard’s Pie.

- 2lb bag frozen lima beans
- 1 stick margarine or butter
- 1 tbs. garlic salt
- 1 tsp. Cajun Seasoning
- ½ tsp black pepper
- 1 tbs. liquid smoke
- 3 slices thick bacon cut to @ ½” pieces
- Cover beans with water plus ½”
- Add bacon, garlic salt and pepper
- Bring to brisk boil and add Cajun Seasoning and smoke
- Boil until reduced about ½ and add butter
- Continue boiling at reduced level until thick
